Sometimes it’s the simplest recipes that you just have to take home with you. I first tried this quick puff pastry zucchini tart at a friend’s place and loved it right away: crispy puff pastry, creamy herbed cream cheese, thinly sliced zucchini and vegan cheese – that’s really all it takes.
The original recipe had already been given a little twist by using vegan herbed cream cheese instead of the plain version. I loved it so much that I had to make it the same way at home.
The best part: this tart takes just a few minutes to prepare and makes a wonderful quick snack, light main dish or accompaniment to a fresh salad.

Ingredients (for 1 baking sheet)
- 1 sheet vegan puff pastry, approx. 275 g
- 200 g vegan herbed cream cheese
- 1 medium zucchini, approx. 250 g, cut into thin 2–3 mm slices
- 80–100 g vegan shredded cheese
- ½ tsp garlic powder
- freshly ground black pepper
- a little salt
- a little olive oil
Instructions
- Preheat the oven to 200°C conventional / 180°C fan.
- Unroll the puff pastry together with its baking paper onto a baking sheet. Prick the pastry several times with a fork, leaving a border of about 1–2 cm around the edges.
- Spread the herbed cream cheese evenly over the puff pastry, leaving the border uncovered.
- Arrange the zucchini slices on top of the herbed cream cheese, slightly overlapping.
- Season with the garlic powder, a little freshly ground black pepper and salt.
- Sprinkle the vegan shredded cheese evenly over the top and lightly spray or drizzle with a little olive oil.
- Bake in the preheated oven for about 20–25 minutes, until the pastry has puffed up around the edges and turned golden brown and the cheese is lightly browned.
- Allow to cool briefly, cut into pieces and serve warm.
