White Beans in Spiced Tomato Sauce (Baked Beans Style)

Every now and then I get a real craving for this quick and uncomplicated dish. It works beautifully as a starter, a small savoury snack in between, or even as breakfast when you simply feel like something warm and hearty.

Ingredients (2-3 servings)

  • 400 g white beans (drained weight)
  • 400 g strained tomatoes (passata)
  • 1-2 fresh tomatoes
  • 1 small onion
  • 1-2 garlic cloves
  • 1 tbsp olive oil
  • 1 tsp tomato paste
  • 1 tsp mustard
  • 1 ½ tsp ketchup
  • 1 tsp smoked paprika
  • pepper
  • salt
  • maple syrup or agave syrup

Instructions

  1. Dice the onion and tomatoes. Finely chop the garlic.
  2. Rinse the white beans.
  3. In a pot, gently sauté the onion in olive oil over medium heat until soft and translucent (do not brown).
  4. Add the garlic and cook briefly.
  5. Stir in the tomato paste and toast it for about 30 seconds.
  6. Add the passata and the diced fresh tomatoes.
  7. Immediately stir in mustard, ketchup, smoked paprika, pepper and salt.
  8. Reduce the heat and let the sauce simmer for about 10 minutes.
  9. Fold in the beans.
  10. Let the dish simmer gently for another 5–8 minutes.
  11. Stir in a splash (about 2 tsp) of maple syrup.
  12. Taste and adjust with salt, pepper or a little more syrup if needed.

Serving suggestion

Serve with toasted white bread or sprinkle with croutons.
