This vegan spinach pizza combines a creamy spinach topping with flavorful mushrooms, garlic and delicate onion rings. Ingredients (for 2 baking trays or 4 round pizzas)

- Pizza Dough Like from an Italian Pizzeria –> recipe here
- 500 g fresh spinach
- 300 g mushrooms, thinly sliced
- about 75–100g vegan cream cheese (depending on the desired creaminess)
- 3 garlic cloves, finely chopped
- 2 onions, thinly chopped
- 2 tbsp nutritional yeast
- ½ tbsp garlic powder
- ½ tsp white pepper
- ½ tsp salt
- 1 pinch of nutmeg
- olive oil for the pan
- vegan shredded cheese, to taste
Instructions
- Wash the spinach thoroughly and drain well. A salad spinner is the easiest way to remove excess moisture. Roughly chop the spinach.
- Heat a large pan with a little olive oil. Add the spinach in batches over moderate heat and allow it to wilt.
- If the spinach releases a lot of liquid, remove some of it or let it simmer briefly until only about 2–3 tablespoons of liquid remain in the pan.
- Preheat the oven to 250 °C (480 °F) or prepare the grill for approximately 300 °C (570 °F).
- Remove the pan from the heat. Stir in the garlic, vegan cream cheese, nutritional yeast and seasonings. Taste and adjust the seasoning if needed.
- The spinach mixture should be creamy and easy to spread over the dough without becoming runny. If it seems too thick, reserve a little of the spinach liquid or stir in an extra spoonful of vegan cream cheese.

- Roll out the pizza dough and spread the spinach mixture evenly over the surface. The layer may seem quite thin at first, but this helps keep the crust nice and crispy during baking.
- Distribute the mushrooms and onion rings on top and sprinkle with vegan shredded cheese if desired.
- Bake in the preheated oven for about 12–15 minutes, or cook on a closed grill for about 10–12 minutes, until the crust is golden brown.
Notes
- This pizza is especially delicious fresh from the oven, but it can also be enjoyed cold the next day.
- Instead of vegan shredded cheese, you can top the pizza with chili flakes, Pul Biber or a drizzle of chili oil.
