Savory Leek & Broccoli Quiche

A good quiche does not need much: a crisp crust, a creamy filling and vegetables that still bring plenty of flavour after baking.

This savoury quiche with leek and broccoli combines all of that in an easy oven-baked dish. The seasoned tofu cream creates a rich and creamy filling, while leek, broccoli and a little vegan cheese provide plenty of flavour and a beautifully golden crust.

This quiche works equally well as a warm main dish or for meal prep and often tastes just as good the next day as it does fresh from the oven.

Ingredients (1 Quiche, approx. 26–28 cm / 10–11 inches)

Allergens: gluten, soy

Crust

  • 200 g flour
  • 100 g vegan butter or margarine
  • 1 pinch salt
  • 3–5 tbsp cold water

Filling

  • 1 leek, thinly sliced into half-rings
  • 1 small broccoli, cut into small florets
  • 1 onion, finely chopped
  • 2–3 spring onions, thinly sliced
  • oil for frying
  • 200 g plain tofu
  • 150 g soy yogurt
  • 80 g vegan grated cheese

Seasonings

  • Kala Namak to taste (or regular salt)
  • black pepper
  • 1 tsp mustard
  • 2 tbsp nutritional yeast (optional, but highly recommended)
  • 1 tsp lemon juice
  • ¼ tsp turmeric
  • a pinch of nutmeg

Instructions

Prepare the crust

  1. Mix all ingredients until a smooth dough forms and shape it into a ball. Cover and chill the dough in the refrigerator for 20–30 minutes.
  2. Lightly grease the quiche dish with vegan butter or margarine.
  3. Flatten the chilled dough on a work surface until it reaches about 70% of the diameter of the quiche dish. Place it in the centre of the dish and use your hands to press it evenly into the edges, creating a small rim. Prick the base several times with a fork.

Prepare the filling

  1. Heat a little oil in a pan over medium heat and sauté the leek and onion.
  2. Add the broccoli and spring onions and continue cooking until no more liquid is released. Remove the pan from the heat.
  3. Meanwhile, preheat the oven to 180 °C / 350 °F top and bottom heat.
  4. For the cream, blend the tofu, soy yogurt and seasonings in a tall container until smooth. Stir in part of the vegan grated cheese and then fold the mixture into the vegetables.
  5. Transfer the filling to the quiche dish and sprinkle the remaining cheese on top.

Bake

  1. Bake the quiche for about 35–45 minutes, or until nicely golden. If the surface browns too quickly, loosely cover the quiche with baking paper or a second baking tray.
  2. Allow the quiche to rest briefly before slicing.

Serving Suggestion

  • Sprinkle with freshly chopped herbs or toasted pine nuts before serving, if desired.

A Quiche for Us – A Dog Quiche for Him

Sometimes the best recipes are not planned at all – they simply happen.

Originally, I only wanted to bake a savoury quiche for us. But as soon as Tobyas 🐾 noticed my sudden burst of motivation, he was convinced: today we are cooking. For him as well, of course.

While I was slicing leeks, preparing vegetables and kneading the dough, I was accompanied by an expectant look. And the more I thought about it, the more I liked the idea: if the oven is already running, why not bake a matching dog quiche at the same time?

While the large quiche for the humans turns golden brown on the lower rack, a smaller dog version with potatoes, broccoli and tofu is baking above it.

Same idea, same principle – but adapted to the different needs of two- and four-legged family members.

The following steps show both recipes side by side. This way, you can bake for both humans and dogs at the same time without any extra effort and without having to switch back and forth between different recipes.

🍽️ Human Quiche: Prepare the Crust

  1. Mix all ingredients until a smooth dough forms and shape it into a ball. Cover and chill in the refrigerator for 20–30 minutes.
  2. Lightly grease the quiche dish with vegan butter or margarine.
  3. Flatten the chilled dough on a work surface until it reaches about 70% of the diameter of the quiche dish. Place it in the centre of the dish and use your hands to press it evenly into the edges, creating a small rim. Prick the base several times with a fork.

🐾 Dog Quiche: Prepare the Base

  1. Finely mash the cooked potatoes with a fork and press them evenly into a small ovenproof dish to form the base.

Prepare the Filling

🍽️ Human Pan

  1. Heat a little oil in a pan over medium heat and sauté the leek and onion.
  2. Add the broccoli and spring onions and continue cooking until no more liquid is released. Remove the pan from the heat.
  3. Meanwhile, preheat the oven to 160 °C / 320 °F fan oven.

🐾 Dog Pan

  1. In the dog pan, sauté the broccoli until lightly browned.
  2. Add 2–3 tbsp water and continue cooking the broccoli for another 5–10 minutes until soft.
  3. Crumble the tofu, add it to the pan and cook for another 5 minutes. Remove the pan from the heat.

🍽️ Fill the Human Quiche

  1. For the cream, blend the tofu, soy yogurt and seasonings until smooth. Stir in part of the vegan grated cheese and then fold the mixture into the vegetables.
  2. Transfer the filling to the quiche dish and sprinkle the remaining cheese on top.

🐾 Fill the Dog Quiche

  1. Stir the soy yogurt, nutritional yeast and turmeric into the dog pan and transfer the mixture to the baking dish.

Bake 🍽️ 🐾

  1. Place the human quiche on the lower rack of the oven. Total baking time: approx. 35–45 minutes.
  2. Place the dog quiche on the upper rack of the oven and remove it after about 25–30 minutes.
  3. Continue baking the human quiche for another 10–15 minutes, until nicely golden.
  4. Allow the dog quiche to cool before serving.
