Every now and then I get a real craving for this quick and uncomplicated dish. It works beautifully as a starter, a small savoury snack in between, or even as breakfast when you simply feel like something warm and hearty.

Ingredients (2-3 servings)
- 400 g white beans (drained weight)
- 400 g strained tomatoes (passata)
- 1-2 fresh tomatoes
- 1 small onion
- 1-2 garlic cloves
- 1 tbsp olive oil
- 1 tsp tomato paste
- 1 tsp mustard
- 1 ½ tsp ketchup
- 1 tsp smoked paprika
- pepper
- salt
- maple syrup or agave syrup
Instructions
- Dice the onion and tomatoes. Finely chop the garlic.
- Rinse the white beans.
- In a pot, gently sauté the onion in olive oil over medium heat until soft and translucent (do not brown).
- Add the garlic and cook briefly.
- Stir in the tomato paste and toast it for about 30 seconds.
- Add the passata and the diced fresh tomatoes.
- Immediately stir in mustard, ketchup, smoked paprika, pepper and salt.
- Reduce the heat and let the sauce simmer for about 10 minutes.
- Fold in the beans.
- Let the dish simmer gently for another 5–8 minutes.
- Stir in a splash (about 2 tsp) of maple syrup.
- Taste and adjust with salt, pepper or a little more syrup if needed.
Serving suggestion
Serve with toasted white bread or sprinkle with croutons.
